CONFECTIONER

Confectioner training curriculum is designed to prepare qualified confectioner who is able to work independently in various catering enterprises, bakeries, confectioneries. This programme is intended for initial vocational education and training. The programme consists of 5 compulsory modules:

  • Workplace preparation;
  • Making non-yeast dough confectionery products;
  • Making yeast dough confectionery products;
  • Production of semi-finished confectionery and decorative elements;
  • Making creamy confectionery.

 

As well 3 optional modules:

  • Preparation of „Baumkuchen“;
  • Making desserts;
  • Making hand-made sweets.

 

During the evaluation of person‘s qualification, the graduate will have to prepare ingredients, make a confectionery product and decorate it. Other competencies are evaluated upon completion of each module. Persons who acquired confectioner‘s qualification will be able to work in bakery, confectionery, catering enterprise, also to continue their studies by completing higher education study programmes.

DURATION OF THE LEARNING PROGRAMME

  • After completing 10th grade: the duration of study is 2 years and 7 months, a confectioner’s qualification and secondary education are obtained;
  • After completing 12th grade: the duration of study is 1.5 years, the qualification of the confectioner is obtained;
  • The duration of continuing vocational education is 9 months, the qualification of the confectioner is obtained.
